Which VMWare product do you download to play KQ8 and how do you set it up and install Win98 on it?

Virtual Machine will work. And it's free. You need to have own a Windows 98 CD, though.

I've personally had better luck running KQ8 via VDMSound through Windows XP.

VDMS is for DOS games. I have used it before to kick start a couple of 16-bit Windows games that would launch WOW, but not NTVDM under XP, like KQ6 Win, but MoE is a 32-bit game that does not use either WOW or NTVDM.

Yeap. I just booted into XP and double checked to make sure I wasn't crazy. KQ8 is setup through a VDMSound shortcut. Launched the game to make sure it ran through it, and sure enough, runs perfectly. When I tried running it without VDMSound, I'd get the KQ8 MOE splash screen, then it would just jump back to the desktop.

VmWare, I've noticed, costs over $100.
There has to be someway a patch can be made for KQ8 to work on Windows Vista/7

That's for advanced unnecessary features. VMWare Player is free.
